Founded by Nick Prochilo, an Italian with roots in Calabria, Prochilo’s Cucina was born from a passion for bringing people together over simple, honest Italian food.

Using high-quality ingredients and traditional methods, we craft pizzas on the Gozney and made-to-order paninis with authenticity and care.

It’s a true family affair—Nick and his wife Mirna create a warm, welcoming atmosphere that makes every event feel personal and full of heart.

We service South-East Queensland, from as high as Noosa down to Coolangatta!

Using the latest in modern pizza-making equipment, we create a top-class experience at your chosen location. We handle the full setup—just provide a power supply, and we’ll take care of everything else.

It’s All About the Dough

Our dough is made using the traditional Napoletana method, with long fermentation and fast baking at high temperatures. This process, paired with high-quality, locally sourced ingredients, delivers a light, airy base that’s soft, crispy, and easy to digest—so you can enjoy every bite without feeling heavy or bloated.
